Farmer's Market Squash Gratin!!!!


On a recent Sunday morning at my local farmer's market, I met a woman while buying yellow squash.


She insisted on telling me about her mother's fantastic recipe using only 3 basic ingredients......yellow squash, tomatoes and onions.   
 
How could this be good?   

"You add a lot of Worcestershire sauce and cheddar cheese on top to make a delicious umami."   hmmmmm, I was intrigued.

I gave it a spin with my own additions and boy, this was DELICIOUS.

Of course I used parmigiano reggiano and my homemade breadcrumbs on top (but go ahead and use cheddar if that's your preference).

This is a homemade recipe, so make it your own by using as much or as little as you like.

Here is how I made it:


Farmer's Market Squash Gratin:

2 yellow summer squash, sliced
2 yellow onions, sliced 
2 large tomatoes or 1 pint of cherry tomatoes, sliced
lots of kosher salt & pepper
olive oil
5 shakes of Worcestershire sauce
big handful of Parimigiano Reggiano or grated cheddar cheese
breadcrumbs for the top (optional)


In a large bowl, mix all the slices of squash, tomatoes and onions together.   Season LIBERALLY with kosher salt and drizzle with olive oil.

Shake that Worcestershire sauce (trust me!) all over and mix together.

Dump into a large oiled casserole dish.    

Sprinkle cheese (I loved the Parm on top) and breadcrumbs all over the top.
Another drizzle of olive oil over the top.


Bake in a 375F oven for 40 minutes or so, till everything is nice and bubbly.

This was even better on day 2 with an egg on top.
