Easiest Summer Fruit Cobbler
This is the easiest thing to make on the planet, even if you don't bake.
It is very adaptable, and I have made it 3 times so far.
The first time I made it, I used fresh Jersey peaches and blueberries.
The second time I made it, I used mixed berries (blackberries and raspberries), but omitted the cinnamon and added in lemon zest.
It's hard to choose which version was the best.
Honestly, you can even use frozen berries if you like, I won't judge.
Important tip: Even though I used a baking pan, it came out a bit thin, all good.
However, I suggest a 9" pie plate for best results.
Easiest Summer Fruit Cobbler:
6 tbsp melted butter
1 cup sugar
1 tsp cinnamon (if using peaches and blueberries)
1 cup flour
1 1/2 tsp baking powder
1 cup whole milk
fruit of your choice
turbinado sugar for sprinkling
Butter a small baking pan, or 9" pie dish.
Oven at 350F.
Mix the butter and sugar to make a paste, then mix in the rest of the ingredients (except the fruit, which will go on top).
The batter will be thin in consistency don't worry.
Pour into the prepared dish and sprinkle the fruit on top of the batter (not inside).
Spoon some turbinado sugar over everything, to make a nice crunch.
Bake around 50 minutes. Let rest in the pan a few minutes.
Fantastic with ice cream or plain yogurt.
