Coffee Granita for a hot day

I am here with a large pot of leftover coffee that I made for company.

I don't want to throw it out, since I buy good espresso ground coffee and hate to waste it.

Normally, I would just make iced coffee and call it a day, but I wanted something sweet and refreshing.

I love granita and Italian ices made with natural syrups, so why not try it at home?

IT IS SO EASY!  and so good!

I kept it in the fridge for 5 days, and it was still good.

Here is how I made it:

3 cups of strong brewed coffee (not hot)
3/4 cup of sugar
1 tbsp kahlua liquor (optional, but makes it special)

All you need is a 9 x 12 glass casserole dish and you are ready to go.

Whisk the coffee, sugar and kahlua, until the sugar is dissolved.

Pour into the glass baking dish and place in the freezer for an hour and half, until slushy.

Take a fork and mush it all around to break it up.
Put back in the freezer for another 30 minutes.

Repeat the process using the fork and mush it up.

Do this about 4 times until desired consistency.  It should be crystalized and crunchy.

Delicious with whipped cream served in little parfait cups!

What a timely post. My Italian chit-chat group is coming today and there is always leftover coffee. Great idea.
