Holiday Pea Salad


My love for peas grows.

Besides being adorable, they are high in fiber and a good source of protein.  
I especially love the "petit pois", a tiny pea.

My friend Martha made Frugal Gourmet's pea salad for a buffet recently, and I decided to make a version with less mayo and do my own thing, since it looked so good.


I served this at a holiday brunch and it was delicious!
It is easy to make ahead and everyone loved it.

Here's how:

Pea Salad: (amounts are approximate, you can add more or less of anything)

2 packages of frozen petit pois, defrosted (the smaller peas are better in this recipe if you can find them)
1 small red onion, chopped
1/2 lb. bacon, fried crisp and drained (you can use the whole package if you like, but I am conservative)
1/2 cup of toasted slivered almonds
big handful of chopped fresh dill

Dressing:
1/2 cup of mayonnaise 
1/4 cup sour cream
1/4 cup cider vinegar
salt & pepper

Whisk dressing into a measuring cup and set aside.

Add all the ingredients to a bowl and pour dressing over to coat.  


*Tip: I always save a small amount of undressed salad for the top so it looks attractive when serving, instead of a white mess.   

Taste and adjust.  You may like more dressing or less, so go slow.  I don't like a gloppy salad.

The next day, the leftovers are wonderful with sliced apple for lunch!
