Mexican Breakfast Skillet & a Giveaway
There is nothing much to this recipe, but I liked it so much, I had to share it with you.
It's really just black beans and eggs.....but by adding a few other ingredients, this became a delicious lunch (or dinner!).
I added the roasted sweet potato, because I always have one leftover (I eat one almost daily along with an avocado).
I was inspired by Jamie Oliver's recipe "All Day Mexican Breakfast" in his fantastic new book 5 Ingredients Quick & Easy Food.
Here's how:
Drain a can of black beans and add them to olive oil in a big nonstick skillet. I added in some garlic for extra flavor (you can use a flavored olive oil too).
Add some sliced chilis or sliced red bell pepper to the skillet, and toss arounds with the garlic and beans.
While the beans are warming, make a few wells in the middle and crack some eggs in the spaces. Sort of like you are making a shakshuka.
If using sweet potato, add in the chunks (cooked of course) now.
Cook the eggs until the desired consistency.....I like them runny so I can dip bread in the yolk.
Turn off the heat and add some chopped scallions, and sliced avocado to the top.
Season with plenty of sea salt and a squeeze of fresh lime juice.
You are ready to dig in.
This is a great dish packed with fiber and protein from the eggs, sweet potatoes and healthy fats from the avocado.
So far everything I have made in this book has been simple and pretty great.

I’ve been watching random episodes of Jamie’s television show that follows his book. Everything looks tasty but he sure is a messy cook.
On one of his previous shows, he made fried haloume (sp?). We tried it and now it’s one of our special treats to include in a salad. Hmmm. Grocery shopping today. Might buy some ... trying to eat more salads for lunch.
