Sheet Pan Dinner: Sausage, Sweet Potatoes & Broccoli


Are you bored with cooking dinner?

I've been bored lately, and I need some inspiration.

I cook so often, I forget about how easy these type of recipes are.

Roasting everything together on one pan.

It's so easy, and easy cleanup too.

You can switch out vegetables, swap cauliflower or Brussels sprouts for the broccoli......and you can use white potatoes if you don't like sweet potatoes, but I recommend the sweets, because they are rich in fiber and vitamin A.

This is so delicious....and tomorrow, you can make a frittata with the leftovers!

Sheet Pan Dinner: Roasted Sausage, Sweet Potatoes & Broccoli:

4 links of good quality Italian sausage, cut into 1" pieces
a head of broccoli, trimmed into medium florets
1 large red onion, cut into chunks
1 large sweet potato, skin on, cut into 1" chunks

For the oil:

1/3 cup of olive oil
1 tablespoon of Spanish smoked paprika (pimenton)
2 garlic cloves, shaved on a microplane (so it dissolves in the oil)
kosher salt & pepper

Make the oil in measuring cup, it will be orange in color.

Preheat the oven to 400F.

You want your vegetables to be sort of uniform in size, so they all cook together.

Lay out your ingredients on a sheet pan.
Pour the oil over everything and toss.

Sprinkle liberally with kosher salt & pepper.

Roast for 35 minutes. You can turn everything half way to make sure both sides are getting brown if you like.

Awesome! Been in a cooking rut myself. This looks easy and satisfying. Any tips on slicing raw sausage? I’ve had the insides pop out while slicing! Lol

Anon,
I slice my links semi frozen (I always freeze bulk sausage links from my butcher so I always have it).

I remove the casing if it isn't frozen, and just crumble into the pan. Easy!
