Roasted Mushrooms & Garlic on Toast....YUM!


Since I practically roast everything (fish and vegetables) on a sheet pan at 400F, it was time to try roasting mushrooms.

My husband hates mushrooms, so I have to partake alone. No complaints here. I am happy to eat them all by myself.

This is the only way I will prepare mushrooms from now on!
No more sauteeing in all that butter.

These mushrooms were moist and flavorful.

Here's how:

I used a mix of mushrooms; cremini, shitake and button.

Slice the mushrooms in quarters or halves, depending on their size. You don't want to slice them, because they will be too thin and burn.

Place a piece of parchment paper on a sheet pan and toss the mushrooms with olive oil and kosher salt.

I added in 6 whole garlic cloves because the roasted garlic is amazing spread on the toast!

Throw on whole thyme sprigs and roast in a 400F oven for 25 minutes.


Now you are ready to use them on buttered toast; polenta or omelets.
