Winter Salad Blues: Arugula with Radish, Manchego & Dates

I have the winter salad blues.

Nothing is blooming, or growing or happy and green.

I have 3 little watermelon radishes left from my harvest, then they are all gone, and I will have to wait till April to see any signs of life.

Here is a delicious salad using what I always have on hand.

I love Manchego cheese here (a Spanish sheep's milk cheese), it goes so well w/ the apples.

You can use regular radishes if you can't find watermelon radishes, and I bet you can't :(

Arugula Salad w/ Radish, Manchego & Dates:

head of arugula, washed and dried
2 radishes, sliced super skinny
2 green onions, sliced
4 Medjool dates, pitted and chopped
1 Granny Smith apple, skin on, sliced thin
hunk of Manchego cheese, diced
squeeze of lemon juice
pinch of sea salt
2 tbsp olive oil

It's pretty self explanatory. It's a salad.

Mix some spicy gorgeous arugula (I am really reaching today!) with sliced apples, chopped dates, the Manchego cheese and sliced scallions.

Whisk up the lemon juice w/ the olive oil and sea salt and pour over salad components.

Mix and serve immediately.

Pretty delicious, if I do say so.

All about apples in salads around here.

I've been using Honeycrisp happily - do you like them?

And lime is my citrus of choice.

One saving wintery grace - I've found that the romaine lettuce has been exceptionally good this season. Extra crisp and flavorful-minerally.

Almost every night I toast nuts in a dry pan on top of the stove for our salads.

You'd think I'd get sick of it but I don't - so much satisfaction for so little effort.

I've had to stop using pine nuts, however.

My one son has a powerful revulsion to the little nubbins - even to their smell toasting.

Ok by me - I'm saving a lot of money using slivered almonds instead!

How do you store the radishes that they last so long?

Arugula - one of my favorites for salad (sadly not shared by everyone in my family, but I can only speak for MY good taste).

I have had a difficult time finding watermelon radishes.. especially since I didn't grow any, but plan to this year! If I can't find any, can I substitute with something else?

Since following your recipes I've grown to really like dates and figs and often add them to salads. This looks healthy & yummy (and colorful).

Diane,

Believe it or not, they keep in a ziploc bag wrapped in paper towels in the crisper drawer of the fridge.

They stay FOR MONTHS! I use a mandolin to shave off slices as I need them.

I am loving dates so much, especially with cheese. Made goat cheese stuffed dates wrapped in bacon this weekend.
