Good Ideas: Chicken Caesar Skewers


You gotta love instagram and Pinterest.

Where were we before all this social media?
I was here, cooking, but nobody cared.

I saw a post on instagram by Julie Resnick of the feedfeed and she posted this great idea, and I knew I was in.

I had leftover grilled chicken from the night before, and everyone loves my Caesar dressing.....
You must use anchovies (stop being a baby, just chop them up and no one will know they are in there!).

The added twist is the bacon, which btw, I cooked on my grill in an aluminum pan, so I did not have to light the stove or oven!
I also cooked the brioche toast on the grill.

win-win.


Chicken Caesar Skewers:

Brioche toast, cut into cubes
cooked chicken, cut into pieces
cooked bacon slices
Romaine lettuce leaves, cut up into pieces

My Caesar Dressing:

6 anchovies, finely chopped
1 large garlic clove, minced
1 tbsp Hellmann's mayonnaise
1 tsp Dijon mustard
juice of half a lemon
handful of grated Parmesan cheese (about 1/4 cup)
1/4 cup olive oil
black pepper

Thread 2 pieces of brioche toast (croutons) per wooden skewer.
2 pieces chicken, 2 pieces of lettuce.
End with a bacon slice and just before serving, drizzle w/ dressing.


Let the party begin!!!
