3:00 pm Apple Date-Nut Cake


Some people are famous for their chocolate chip cookies, I am famous for my date-nut bread.

Most people know that when you stop by my house for coffee at 3 pm, there is usually a loaf of date-nut bread on the counter, I make one weekly in the cooler months. I have even gotten Marie from Proud Italian Cook addicted!

I love dates, probably better than dried figs (shhhh, don't tell the figs).
My favorite are Deglet Noir from Tunisia.

I have found the best ones are at Costco, called Made in Nature (you can also order them on amazon grocery), and contain no sulfur dioxide, as do most dried fruits. They are absolutely the best, and the big bag is great for snacking and baking.
I can't live without them.

Here, I threw in an apple and it changed the loaf into more of an apple cake.

This is a healthy cake, it only uses 1/4 cup of olive oil, so go ahead and have another slice.


Apple Date-Nut Cake:

~ 1 cup pitted dates, chopped (I love Medjool or Deglet Noir dates)
~ 3/4 cup of chopped walnuts
~ 3/4 cup of boiling water
~ 1/4 cup of olive oil + 2 tbsp
~ zest of an orange
~ 1 apple of your choice, cut into chunks

~ 1 cup sugar
~ 2 eggs
~ tsp vanilla
~ 1 1/2 cup of flour
~ 1 1/2 tsp of baking soda
~ 1/2 tsp salt

Pour boiling water and oil over dates and walnuts in a bowl and let stand for 15 minutes. To this mixture add the rest of the ingredients, adding in the apple last.

Pour into a greased and floured loaf pan.

Bake 45-55 minutes at 350F degrees.


Let cool before releasing from pan.


This is also a great freezer cake.

Stacey, in your intro you remark about liking Deglet Noor dates, but in the recipe you mention Medjools. Help!

The Medjools are delectable, sweeter, slightly higher in calories.

Which is it for this recipe?

Sounds like a wonderful snacky cake for breakfast, tea, late night, any sneaky time... the kind I tend to "inch away" at, slicing off a bit, and then "oops, a little crooked - better straighten that out..." You get my drift. :)

Oh you're cheating on your figs! I seldom buy dates, but will have to try your "famous" recipe.
I'm so happy, I'm making this tonight! I can testify that Staceys date nut is the best, my family loves it!! Brilliant with the apple added, can't wait for coffee time later.

This is a classic Stacey Snacks move - in lieu of a stale Entenmann's chocolate chip loaf bought at CVS (bad for you), she's 3pm snacking on homemade olive oil cake chockfull of healthy nuts & fruits (good for you)!

Ciaody! This cake was fine. You know how someone will ask "how are you"? A common reply..."I'm fine", not bad, not great. Fine. Now, if you define the word 'fine' the meaning is 'of high or highest quality'; 'superior'. Allow me to reiterate. This cake was FINE. Merci Beaucoup.

I will take the word "fine", because you are using it as an adjective (meaning of the "highest quality"), not the adverb "it's fine", meaning satisfactory.

I made this with whole wheat pastry flour and about 1/8 cup less sugar. Very good and a big hit with my family.

Looks wicked delicious and I absolutely love dates. Never would have thought to combine them with apple. :) That looks like a really long loaf, too, like a pan one would buy in la belle France. I love your recipes so much!

I love this recipe, and make it frequently (thanks for another great recipe!) I would like to make the recipe as muffins, instead of in a loaf pan, I'm hoping that will work. However, I notice in your apple date nut muffin recipe you use baking powder (but baking soda here). Which would you recommend for muffins? Thanks so much!
