A Week of Lunches
Some of you would say my husband is spoiled. You would be correct.
I make my husband's lunch 6 days a week (Sunday is my day off).
I pack a lunch box every morning.
Lucky him.
It's hard to be creative after all these years, but somehow I manage to surprise him once in a while with something new.
No boring tuna sandwich (well, sometimes) here.
I try and make enough food for dinner, so there are always leftovers for lunch the next day.
This would include a frittata, which is excellent the next day on bread w/ some garlic mayo, served at room temperature.
I post a lot of sandwiches on this blog, but here is last week's lunch box sampling.
Ham, Salami, Roasted Peppers and Olivada w/ Fresh Mozzarella on Ciabatta Rolls. Italiano!
Duck Liver Pate w/ Cornichons & Dijon Mustard on Raisin Pecan Bread. Parlez Vous Francais?
Egg Salad w/ Chives, Dijon Mustard & Mayo w/ Bacon on Brioche. My favorite!
Grilled Chicken Breasts, Roasted Peppers & Homemade Basil Pesto.
Veggie Sandwich w/ Jarlsberg, Red Peppers, Cukes & Sprouts w/ Herb Mayo. (here is recipe).
Peanut Butter & Nutella on Whole Wheat.

Spoiled to the max, even a variety of assorted breads. I think it should become a book, "What's in Henry's lunch box?"
What else is in there, fruit, chips, any sweets? Tony got chicken salad wrapped up in a collard green this week, ha ha
