Eggplant Salad w/ Mint, Scallions & Feta
I'm addicted to these Japanese eggplants.
They are so compact and pretty. They have no seeds, so no bitterness.
My husband does not like eggplant because it makes his tongue burn, I think he's allergic to the seeds?
When I was a teenager, my friend Missi used to say the only good eggplant is the kind that makes your gums tingle, in a good sort of way.
Do you know what I am talking about?
I like to grill them w/ some kosher salt and splash them with balsamic vinegar while still warm and they are so sweet and sticky.
This is a perfect, simple summer eggplant salad.
You just sprinkle some kosher salt on the halves and drizzle w/ olive oil.
I grill them on my gas grill on medium until they get nice and soft and charred, along side some big fat scallions from my garden.
I cut them all up while warm and toss them w/ some fresh lemon juice and mint leaves. Sprinkle some feta cheese on top.
Nothing else is needed except a fork.
Yummy stuff.

I said that the Japanese variety are smaller and less bitter. No confusion. I like them better than the bigger Italian variety

No worries...........those are actually little Japanese eggplants in the photo, they are smaller than they look!
