Beet & Avocado Salad w/ Mustard Dressing
Just when you thought it was safe and that I had forgotten about beets.
Not a chance.
I harvested the last of the beets in the MCG for the season.
That doesn't mean you won't be seeing beet recipes here, you know how much I love them, especially during the lean winter months.
Here, the lovely Gwyneth Paltrow pairs her red orbs w/ avocado and makes a nice mustard dressing to go with.
I used my beautiful garden fresh red onions and their scallion tops too. I'm such a thrifty gardener!
I loved the tangy Dijon mustard dressing on the avocado. This was not only a delicious, healthy salad, but a pretty one too.

Roasted Beet & Avocado Salad (adapted from "It's All Good")
1 large avocado, skin removed and diced
4 large beets, roasted (you had better know how to roast beets by now!), and diced the same size as the avocado
bunch of scallions, sliced thin
1/2 red onion, thinly sliced
kosher salt & pepper
Dressing:
2 tsp Dijon mustard
1/4 cup of olive oil
2 tsp white wine or champagne vinegar
pinch of sea salt & pepper
It's pretty basic.
Dice up the avocado and roasted beets to be the same size and lay them on a platter.
Sprinkle the sliced scallions and red onions all around.
Sprinkle w/ kosher salt & pepper.
Spoon dressing over just before serving.

I just LOVE the color combination of this salad. Never thought of pairing avocado with beets and the dressing sounds divine. Definitely giving this recipe a try.
