What's for Lunch? Grilled Cheese w/ Figs & Prosciutto

My friend Linda bought me this wonderful book called Fig Heaven for my birthday.

It is a cookbook all about figs!
Who knew such a book existed?

It has my name written all over it.

There a tons of great recipes using my beloved fresh figs, and during the lean winter months, using dried figs.

Did you know that figs are dried right on the tree? Yup.

"The fig is a very secretive fruit.
As you see it standing growing, you feel at once it is a symbolic:
And it seems male.
But when you come to know it better, you agree with the Romans,
it is female."

D.H. Lawrence

Reading thru this beautiful book makes my mouth water and inspired me to make this yummy sandwich for lunch.

Start with some good rustic Italian bread.

Spread some honey mustard or mustard of your choice on both sides.

Lay slices of Gruyere, cheddar, or brie on the slices.

Top with some halved, dried Calimyrna or Mission figs and some prosciutto.

Cook open faced in the toaster oven and add fresh arugula before sealing the bread slices shut.

Delicious!

I'm glad you liked the book and are cooking from it. This recipe looks great. I can't think of anyone else else it would be better suited for.

I knew this book existed ~ because I have it! Marie Simmons's recipes are wonderful. I also have her book The Good Egg, another great one. I have a little fig tree in my backyard. For years it yielded just a handful of figs during the season, one at a time, so that I couldn't do anything with them. Last summer it went through a growth spurt and produced a ton of figs. This book came in handy as you can imagine. I didn't make that grilled sandwich but it looks great.

Looks like a wonderful marriage of salty and sweet ... gooey and crunchy. Love!
I always love the things you post, so I've gotta try figs again. We had a tree in our yard and it was the first thing to go! Sorry. Sandwich looks fabulous with the melting cheese oozing out, and that bread! 3035 xploais
