What's for Lunch? Grilled Cheese w/ Figs & Prosciutto
My friend Linda bought me this wonderful book called Fig Heaven for my birthday.
It is a cookbook all about figs!
Who knew such a book existed?
It has my name written all over it.
There a tons of great recipes using my beloved fresh figs, and during the lean winter months, using dried figs.
Did you know that figs are dried right on the tree? Yup.

Reading thru this beautiful book makes my mouth water and inspired me to make this yummy sandwich for lunch.
Start with some good rustic Italian bread.
Spread some honey mustard or mustard of your choice on both sides.
Lay slices of Gruyere, cheddar, or brie on the slices.
Top with some halved, dried Calimyrna or Mission figs and some prosciutto.
Cook open faced in the toaster oven and add fresh arugula before sealing the bread slices shut.
Delicious!
