Nigella's Chicken w/ Potatoes & Chorizo

I'm a Nigella virgin.
I don't think I've ever made one of her recipes.

She is pretty new to American television, and I find her self confidence and personality refreshing.
She says she is not a "chef", but just a "home cook", like us!

Here's a great company dish that is inexpensive and so simple to prepare.

2 pans feed 6-8 people and it takes all of 10 minutes to put together.

It's basically "chicken and potatoes", however, the oregano and orange zest (mixed in with chorizo of course!), takes this dish to new heights.

I used Mexican chorizo, but any good quality smoked sausage, like kielbasa or andouille is fine.

Nigella's Chicken w/ Potatoes & Chorizo: (adapted from Nigella Lawson)

2 tbsp olive oil
kosher salt
12 chicken thighs (bone in with skin)
750 grams chorizo sausage, cut into chunks (any smoked sausage is fine)
1 lb. red new potatoes (halved or quartered)
2 large red onions, peeled and roughly chopped
2 tsp dried oregano
zest of 1 orange

Lay out the chicken thighs on 2 sheet pans with edges (6 per tray).

Place potatoes and chorizo around the chicken and drizzle on the olive oil and a little kosher salt.

Throw the red onions pieces and dried oregano all over the trays and finish w/ the orange zest.

Place the 2 pans in the oven at 375F, and bake for 1 hour, rotating the pans after 30 minutes and making sure the chorizo is not burning.

Delicious and easy!

I've tried many Nigella recipes and find them reliable. Over the top dangerous decadence - her CHOCOLATE PEANUT BUTTER CHEESECAKE. I LOVE her BAKED POTATO SALAD. This weekend, I made her LINGUINE WITH LEMON, GARLIC & THYME MUSHROOMS - so good! Believe it or not, I like her PEANUT BUTTTER HUMMUS. A good friend makes the chicken/chorizo/potato dish here. Does Henry share any of his reactions to the luscious Ms. Lawson?
Such an easy recipe that looks so good. Very pretty too!

Nigella Lawson has been on American television for over a decade.
I love her books and have used them often. I missed this one! A great dish to take to someone, kinda like your green beans, lemon and chicken. all in one! Thanks Stacey!

I use her method for roast chicken, but aside from that I'm a Nigella virgin too. Not for long though, this dish looks so good and easy, I'll be having my way with that little flirt soon.
