Holiday Gifts: HOME MADE Apple Date Chutney
Here's another cool cookbook for your holiday gift list.
It's called HOME MADE by Dutch blogger, Yvette Van Boven.
I love this book because of its quirky drawings and wonderful photos of Paris, and interesting (though a bit unconventional) recipes.
Lots of nice cocktails, homemade ice cream, breads, jams and chutneys, you name it.
I have a list of fabulous sounding recipes bookmarked.
My first recipe to try was the apple date chutney. It makes 4 nice jam jars, so I can keep one and give away 3 as holiday gifts.
This was FANTASTIC with an English farmhouse cheddar, with pate or on a roast pork sandwich.
It's like a spicy applesauce, we ate with potato latkes for Hanukkah.
It has a deep spicy flavor from the cardamom and cumin, yet, sweet and tangy from the dates and apples. Very complex and special.
This was very easy to make, it took a total of 1 hour, from start to finish.
Apple Date Chutney (from HOME MADE):
1 1/2 tbsp butter
2 pounds Granny Smith apples, cored, peeled and cut into 1/2" inch chunks (about 3 big apples)
1/2 cup turbinado raw sugar
1 piece of ginger the length of your thumb, peeled and finely chopped
1 cup cider vinegar
1 cup water
1 cinnamon stick
1 tablespoon cumin
2 tablespoons ground cardamom
1 clove garlic, crushed
2 cups pitted dried dates, cut into chunks
1 cup golden raisins
Heat the butter in a heavy-bottomed pot and sauté the apples together with the sugar and ginger, turning to coat all sides of the apples.
Add the vinegar and water. With spices and garlic, slowly bring to a boil. Add dates and raisins. Leave to cook for 15 minutes over medium heat, stirring occasionally to keep from sticking to the bottom of the pot.
Fill four clean 1-pint jam jars with the hot chutney and seal with the lids. Refrigerate and keep for up to 2 months, or process in a boiling water bath for longer storage.
