Bacon Horseradish Cheese Ball

Stacey is making a cheese ball? She must've have been kidnapped by Paula Deen.
Not the case.
I can be cheesy too and use a block of cream cheese in a recipe once every few years.
Don't knock it, this was so good. I dare you not to like this.
This is perfect on your holiday table even if you don't live in Texas.
We LOVED this.
Bacon Horseradish Cheese Ball: (I dare you).
8 ounces cream cheese, at room temperature
1 cup shredded cheddar cheese
2 tablespoons chopped fresh cilantro
2 tbsp chopped scallion
1 tsp of prepared horseradish
4 slices cooked bacon, crumbled, divided
salt to taste
1/4 cup sliced almonds, toasted
Mix together the cream cheese, cheddar cheese, horseradish, cilantro, scallion, and half of the crumbled cooked bacon with a rubber spatula. Taste and adjust seasonings and add salt if needed.
Place the toasted almond slices and remaining bacon on a plate and mix together to combine.
Roll the cheese mixture into a ball (this is a bit of a messy job), then place on the plate and roll in the bacon and nut mixture until covered in goodness.
Chill covered for at least an hour before serving.
Can be made one day ahead.
Notice, at least I didn't serve it with Ritz crackers!

I remember cheese balls! I think I made one in the actual 80's (Creak).
And I even know who Paula Deen is. We don't really watch TV but my vet's giant flatscreen in the waiting room one day revealed all. Couldn't believe my eyes, or ears.
