What's for Dinner? Baja Fish Tacos
This was my second try at fish tacos.
This version wins the prize because it was SO EASY! and a healthy dinner was ready in a flash.
I was excited to see Grouper in my fish market, since it is not an east coast fish and I never get a chance to eat it. It's such a nice firm, mild white fish and I knew when I saw it, fish tacos it was going to be.
My fish market sells a fantastic in house made cole slaw, so that saved me all the time shredding cabbage!
Baja Fish Tacos
1 lb. of Grouper, or other firm white fish (mahi mahi is also a good choice)
ancho chili powder
kosher salt
soft corn tortillas
store bought cole slaw
sauce:
creme fraiche or sour cream
chopped fresh cilantro
squeeze of a fresh lime
Mix the cream sauce ingredients together with a fork and set aside.
Cut your fish into cubes and sprinkle w/ kosher salt & ancho chili powder.
In a heavy nonstick skillet, heat some olive oil and cook the fish pieces for about 2 minutes total. Transfer them to a foil packet, so they stay warm and moist and finish steaming in the foil.
Heat up the tortillas if you like in the microwave or frying pan. Spread each tortilla with some of the cream sauce and top with some slaw.
Place cooked fish pieces in with the slaw and roll up tight. Serve immediately and enjoy!

I recently started eating fish (mild white fish like you described) and I keep telling myself I should make fish tacos. How funny that you should post this today. I think I'll be trying this sooner rather than later.
By the way, I have to ask, how do you manage your time so well. Full time job, blogging regularly and often, gardening, dining out. I get so overwhelmed trying to do so much that I always drop the ball on something. Please share your secret! lol
