Pea Pancakes w/ Smoked Salmon & Creme Fraiche
My friend Stephane from Zen Can Cook is a great chef. It's rare that I even attempt one of his recipes, so when I do and it comes out great, I feel like I deserve a gold medal.
This recipe is so easy, even your kids can make it if you let them use a food processor!
Stephane uses little hen eggs for the top, but I only have one big HEN at home, so that wouldn't do.
I added creme fraiche, lemon zest and chives instead to the tops, and they were a big hit.
These are not great make ahead apps, so have your batter ready to fry up and everything in place and bring them out as a first course.

Zen's Pea Pancakes w/ Smoked Salmon & Creme Fraiche:
1 1/2 cups of frozen peas, defrosted under warm water and drained
2 tbsp flour
1 egg
1 tsp salt & pepper
vegetable or canola oil
1/2 lb. of good smoked salmon
zest of a lemon
creme fraiche
Puree 1 cup of the peas w/ the flour, egg, salt and pepper in a food processor, saving 1/2 cup of whole peas.
Transfer puree to a bowl and add the remaining whole peas. Mix together.
Add about 2 tbsp of oil to a nonstick frying pan and drop in a tablespoon of mixture to form a small pancake. I fried 4 at a time, to make a total of 12 pancakes.
Fry for about 2 minutes on each side, you don't want them to be too brown. They flip pretty easily, which is a bonus.
Add a piece of smoked salmon to each pancake and a dollop of creme fraiche.
To the tops add fresh lemon zest and snipped chives.
Just before serving, squirt some lemon juice over the pancakes.
Serve immediately.
