Kale Kick: With Onions, Capers & Raisins
I am in love with Nigel Slater's book Tender a Cook and his Vegetable Patch.
Now that it is finally growing season, I am excited to try his simple vegetable recipes and his tips on planting and gardening. It's like reading a sexy novel with food photos, and I love his style of writing: "boil the beans enthusiastically" and "it turns out a creamed spinach of extraordinary solace & luxury"; "decrease the heat so the lentils simmer merrily".
He is very romantic about his veggies.
Since I am on a kale kick lately, I thought this recipe sounded simple and delicious.
It was.
Kale w/ Blood Orange Dressing w/ Warm Onions, Capers & Raisins: (adapted from Nigel's book)
2 cups of Cavolo Nero (kale)
1/2 onion, red or white, sliced thin
sea salt
juice of a blood orange
2 tbsp white balsamic vinegar
3 tbsp olive oil
2 tbsp golden raisins
2 tbsp capers
In a heavy saucepan, cook your onion on medium low heat in some olive oil for a few minutes until wilted, but do not let them get brown. Sprinkle with some sea salt.
In a small bowl, whisk together the juice from a blood orange (or regular orange), the vinegar, oil and capers. Add the dressing to the onions cooking in the pan and cook for a minute. Add in the raisins last.
Steam your kale in the microwave or steamer basket, however you like, for 2 minutes.
Pour the warm onion raisin dressing over the steamed kale and serve right away.
I loved this on a roast pork sandwich! Delicious.
Eat your kale.
