Eat This Salmon. Lose 5 lbs.



Did I tell you my 30 year high school reunion is coming up?
Well, now you have figured out my age.

I would like to lose a solid 6 lbs. before the big event. I really need to get serious and stop eating cheese at 11 pm; drinking more than 2 cocktails on weekends, and basically, stop baking all together.

Maybe I should just quit the food blogging business for a while.

Is this a business? If so, let me know.

My friend Linda eats this when she wants a little detox in her life.

I would happily eat this dish weekly, whether or not I need to lose a few pounds.
It is my new favorite, EASY weeknight dinner.



Linda's Spiced Salmon: 2 portions

(2) 6 oz. salmon filets
juice of 1/2 lemon
1 tbsp. brown sugar
2 tsp chili powder
grated zest of the half lemon
3/4 tsp ground cumin
1/2 tsp kosher salt
1/4 tsp cinnamon

Spray some PAM on a foil lined baking sheet (parchment paper is good too). Lay the salmon filets on the foil.

Preheat oven to 425F.

Squirt the fresh lemon juice over the salmon pieces.

Mix the spices and zest together.



Divide the spice mixture in half and pat it down on the salmon.



Bake for 12-15 minutes, depending on the thickness of the fish.

This was delicious. LOVED.

Maybe with some help from this salmon, I will win the "Dick Clark Award" at my reunion again (the award for the oldest teenager!).

Now, now I graduated high school early during the NYC years when they were fast-forwarding you out of the system - one never knows about age...

The salmon is perfect for spring eating. Beautifully spiced. I am working on getting rid of a solid 15 pounds...the pasta diet isn't working.

Everyone in my family loves salmon except me, I find it a touch too fishy. The only way I CAN eat it is to doll it up with a tasty rub or sauce to cover the flavor of the fish a bit. This looks like just the ticket. Have fun making all the other women at the reunion jealous!
Got interested in losing weight. I'll mix exercise with this delicious dish and hope to see good results. Its fun to see and catch up with your classmates after so many years have passed. =)

I doubt there will be any food worth posting at my reunion, and I am going solo, Henry wouldn't be caught dead at a high school reunion!

I just put salmon on my grocery list for tonight. This recipe is now on my weekly menu (I have my daughter's wedding in November and I'm in the same need-to-shed-a-few-pounds predicament).

Have made this several times now. I love it. I by-pass the oven and cook the salmon on the grill.
