What's for Lunch? Tortilla Pizzas even a kid can make!
Do you have 15 minutes? If you do, then you can make the most delicious pizzas at home with your kids (or without) using store bought tortillas. Don't bother going out for a reheated cardboard slice.
You can basically put anything on a tortilla and bake it in the oven for 12 minutes and it comes out nice and crispy and they are fun to make!
Here I used some excellent jalapeno spicy tortillas from Trader Joe's.
Use fresh mozzarella, the kind packed in water and your favorite jar of tomato sauce and you are in business.
This is a fun thing to make with your kids, they can decorate the tops to make their own creations.
Here is my Margherita version:
2 small tortillas
1 large bowl of fresh mozzarella, packed in water and patted dry w/ paper towel
a few tablespoons of good jarred tomato sauce
fresh basil leaves for garnish
Italian oregano seasoning
Lay the tortillas on a sheet pan and spoon a big tablespoon of tomato sauce in the center and swirl it around almost to the edges.
Slice and scatter the mozzarella cheese around and dot the basil leaves in between the cheese. Sprinkle w/ Italian seasonings.
Place in a preheated 375F oven for 10-12 minutes, until the cheese is bubbling.
With a spatula, remove pizzas to a cutting board and let rest a minute, then slice.
Lunch is served!

What jarred sauce do you like? I'm always looking for a better one. Beth
When I buy jarred sauce I use Victoria's, it's very good. They make a bunch of Italian products, liked marinated artichokes, capers, roasted peppers, etc.
I also like Don Peppino's pizza sauce in a small can. It is all natural and just tomatoes and oregano......it's yellow and has the pizza guy on the front, very old school.
