Refreshing: Watermelon & Tomato Salad



If I didn't have a food blog, I would never have thought of this winning combination.

Watermelon just goes so well w/ salty things like feta cheese, olives and tomatoes.

Here I paired watermelon chunks w/ yellow tomatoes from my garden with some black olives, lime zest and fresh herbs for a delicious, refreshing summer salad.

Loved.



Watermelon & Tomato Salad:

1 seedless watermelon, cut into 1" cubes
1 basket of yellow cherry tomatoes, halved
handful of kalamata olives, cut into slivers
handful of fresh basil leaves, cut into chiffonade
handful of fresh mint leaves, cut into chiffonade
zest of 1 lime
sprinkle of kosher salt
2 tbsp red wine vinegar
3 tbsp olive oil
1/2 cup of crumbled feta cheese (optional)



Mix all ingredients in a large bowl, tossing lightly. Add the vinegar and oil and sprinkle with feta cheese, if using.



Best served chilled. Can be made 2 hours in advance.



Keepin' it cool.

I keep seeing watermelon paired with tomatoes so I am going to have to try..I love the tomato and olive pairing so I will have to trust everyone on the watermelon addition. I also have a HUGE Watermelon sitting in my fridge that I am trying to use up. Thanks!

We've only eaten watermelons by themselves. I haven't ever tried pairing them with anything.

It sure is pretty. Sounds very good too.

Enquiring minds want to know...are you an air conditioning girl? I hate it, but this week in NJ is going to be tough w/o it. One of my coping strategies is to subsist on watermelon. Preferably munched in the bath.
I've been seeing this around too and wondered how it tasted. I'll be adventurous and give it a try now!
That looks so cool and refreshing. I always put salt on my watermelon even when eating it alone.

I made a salad almost exactly like this (minus the olives) for a dinner at the beach for 40 members of Randy's family (yes, I was on vacation). Of all the million things I made, this was the one people commented on most. Such a delicious combo. I'm teaching it this week in a class but am going to add watercress to it and ricotta salata instead of feta.

Oohhh....YUM! This reminds me of a dish my Aunt brought on the 4th. Skewers of watermelon chunks, with cherry tomatoes and basil leaves, a;; drizzled with a reduced balsamic. They were addicting, and this looks even better! - S
