My Favorite Apple Cake



There are a lot of apple cakes out there in the world of recipes, but this is my personal favorite.

It's a small cake, enough for about 8 slices, nice after a dinner party and great for breakfast.

It's very simple to make, and you probably have everything in the house.
It uses healthy olive oil instead of butter and it's moist and delicious, sticky and sweet.

I used bourbon vanilla in the batter, but I don't expect you to have that, so substitute regular vanilla with some bourbon.



My Favorite Easy Apple Cake:

1 egg
3/4 cup sugar
1/4 cup olive oil
1 tbsp whole milk or heavy cream
1 tsp bourbon vanilla (or 1/2 tsp of bourbon + 1/2 tsp vanilla)
1 cup flour
1/2 tsp baking soda
1 tsp cinnamon
1/8 tsp nutmeg
2 small apples, peeled and diced
1/2 cup chopped walnuts

Icing:
1/2 cup confectioner's sugar
3 tbsp maple syrup
1 tbsp cold water

Mix the egg, oil, milk and bourbon vanilla in a bowl and gradually add the rest of the ingredients, adding the apples and nuts last. Mix with a wooden spoon.

In an 8" springform pan, cut a piece of round parchment paper for the bottom of the pan, and butter the sides of the pan.

Spread the batter into the pan and bake 35 minutes at 350F.
While the cake is in the oven, make the icing. Mix with a fork in a bowl until it reaches the consistency you like.

Drizzle the icing with a fork while the cake is still warm.
Let rest in the pan 20 minutes before removing sides.

This cake is delicious warm out of the oven, and also excellent the next day.

This is one of the best cakes I have ever eaten. Can't make it often or my husband and I will gain 10 lbs. as we can't stop eating it. It is now My Favorite Apple Cake too! Thank's for all of your inspirational recipes.

Stacey - I had two puny apples in the house and was searching for a recipe today and settled on this one. I made it as apple muffins instead of a cake and threw in some raisins. Gave six to my neighbor and kept three - already I've eaten two. They are so delicious. Will be making this over and over again.
Hey Stacey, this was on my list and today was the day! Yes!!! Even had the correct vanilla, but skipped the water and used bourbon. having a nice slice now with a tad of bourbon. It's 3:00 here! I'm ready.
