Mozzarella Bites



For as much as I love those Caprese Skewers, I don't think I can look at them one more time.
I made them for every summer party last year, because they are pretty and so damn easy.

I needed a change for the little fresh mozzarella balls called Ciliegine (little cherries).

I got this great idea from Elaine at The Italian Dish and I guess these will be my new favorite summer easy appetizer.

Roast yellow and red bell peppers. My easy method is here.

Slice into long thin strips and roll around nice little fresh mozzarella balls packed in water. Secure at the ends with a toothpick.



Season w/ sea salt & pepper and drizzle a little white balsamic vinegar and olive oil just before serving.

Garnish with fresh basil leaves cut into chiffonade.



Can be made 2 hours ahead.

Go one step further and stuff the boccaccini into a cherry tomato that has been cleaned out with a melon baller and wrap that around a strip of roasted yellow pepper. Make a balsamic glaze and put it in a squirt bottle and decorate.
