What's for Lunch? Toasted Cheese w/ Salsa



I have never met a person who didn't LOVE grilled cheese.

There was a place in NYC called NYC Grilled Cheese. The place was always crowded, not sure why it closed. Their sandwiches were amazing. Homemade bread sliced to order, your favorite cheese, and your favorite filling.
Their most popular was tomato, mozzarella and spinach. Yum.

Here's a new trick: I never seem to have room temperature butter laying around to smear on the bread slices before going in the frying pan, and it can be challenging trying to get that cold butter spread on the bread, so I now swipe some mayo on the outside of the bread slices and fry them. Works like a charm!

Today's lunch is saving you the butter or mayo frying pan calories.

We are toasting the bread, open faced in the toaster oven. The bread won't be as buttery greasy or with grill marks, but it's the New Year, I am trying to save calories where I can.

I use a combination of shredded cheddar and Monterey Jack cheese (any Mexican cheese blend will do).

Start with some good bread slices and spread the shredded cheese on top. Place in a toaster oven or under the broiler for a minute or two until cheese is melted.

Place a tablespoon of your favorite Mexican salsa on one slice and close up the sandwich so the filling gets nice and warm with the gooey melted cheese.



Now take a bite and smile. This is one of my husband's favorite toasted cheese combos.
If you don't have salsa, pickle relish in the middle is also a good choice.

Oh it has to be sourdough, cheese, spicy chicken and avocado!
I love a homemade pimento cheese spread on bread like yours sprayed with a little olive oil and grilled in a panini press. Yum. I never thought of adding salsa. Looks good.

You can also get around hard-as-a-rock butter by melting the butter in the pan before putting the bread in.

Grilled cheese is one of those things I have convinced myself I don't like. But when I take a bite of my kids' sandwiches in restaurants, which usually use terrible bread and terrible cheese, I fall in love. What I should do is just make myself a really good one and enjoy it. Salsa sounds great!

There's a restaurant outside of Detroit called "Grilled Cheese and Tomato Soup restaurant." Haven't made it there yet.

Hi Stacy, I've like good old American yellow cheese sandwiched between 2 slices of a good Italian bread buttered with mayo and ketchup and fried......secret sauce....doing it this way since I was a little kid.

Liking the salsa idea, and in my house, it MUST be Trader Joe's DOUBLE ROASTED SALSA. My middle son lives on it. I've bought all different kinds of fancy, expensive, gourmet brands for him to try, but only TJ's double roasted satisfies his jar a day habit. I think he grew 3 inches in the last 2 months. And to top it all off, the weirdo hates CHEESE! Hey, i found my pet peeve, previous post.

Love the idea of salsa...duh, it's like a bread quesadilla! Great idea on the Best Foods...er, Hellman's mayo. I'll have to try that!

Love grilled cheese! My fav is my husband's bread w/mayo instead of butter, and Gorgonzola and a good
cheddar like Dubliner. Or just plain
old Kraft altho we don't usually have that in the house!

Like the idea of salsa. My favorite is a swipe of Stonewall Kitchen's Maine Maple Champagne Mustard on the bread, cheese, and a slice of tomato--yum!

I found a recipe from Emril Lagasse that I now make all the time where you brush a balsamic vinegarette on the sides of the bread that face inside, then fill it with mozzarella, proscuitto, and basil. So good.
