Broccoli Bites for Kids



File this under the Onion Soup Mix Recipe category, though there is no Lipton onion soup mix in site.

I may even serve these at my next dinner party, they were that good!

While babysitting for my 6 year old picky eater niece, I had to come up with a good lunch that would be fun for the two of us to make together.

She is not a big broccoli fan (or any vegetable fan), but I told her we would add melted gooey cheese and form the patties with our hands. She was sold.

Please don't laugh when you read this recipe, it is terrific and easy.
This would be a great vegetarian dinner along with a soup or salad.

I made it my own by adding homemade breadcrumbs and fresh chopped steamed broccoli along with lowfat mozzarella cheese mixed with the cheddar.



Broccoli Cheese Bites (adapted from My Tasty Treasures & WholeSomeBabyFood.com):

16 oz. package of frozen chopped broccoli, thawed and drained of liquid (I used fresh steamed broccoli)
1 1/2 cup of grated cheddar cheese
3 eggs
salt & pepper
1 cup of seasoned Italian breadcrumbs

Mix all the ingredients together in a large bowl.

With your hands, form small patties and lay on a parchment lined baking sheet.



Bake at 375F for 25 minutes, turning the patties after the first 15 minutes.

Let cool and enjoy!

My friend's mom used to make broccoli patties all the time and they were awesome. I think she used bisquick. I'd definitely try these.

Hmmm. I try not to use my oven [long story short, it's hard to do]. I wonder how these would come out in a barely greased non-stick frying pan?

I made them two nights ago, with carrot soup, and they were a huge hit, both with adults and kids. My daughter dipped them in ranch dressing. My husband dipped them in his soup. My son, a very picky eater, ate two without a lot of complaining. They were even excellent the next day, I just revived them in a Pam-sprayed skillet.

Definitely want to try them for a party appetizer. These would work as cauliflower bites, too, don't you think?

Definitely a great appetizer for adults too. Some kind of dipping sauce such as ranch dressing or a spicy aioli would work well. Yum!
This is a keeper. Like Stacy, I steamed fresh broccoli and then chopped it. I used an extra egg and not as many bread crumbs; had to adjust to get the right consistency to get it to stick together. I also used some feta along with the cheddar - a mix with swiss and cheddar or parmesan would also be good.

I just made these with Asparagus because I didn't have any broccoli. They turned out the same and tasted great! As a post -graduat student I barely have time to sleep let alone eat well so these are perfect and so easy to make!

Just to pass this on...I recently saw the results of research that indicate hatred of broccoli is a genetic trait; there is a gene some people have which literally makes broccoli taste revolting to them. It may not be their fault if they don't like these. I'll try 'em though. They look delicious to me!

not only is this great for 6 year olds, but college kids too! i made these with a bunch of random frozen veggies i had and they are so easy to make a ton of and refrigerate to eat all week. awesome idea :)

I happen to have a ton of broccoli and cheese and a dinner party to go to tonight. I would love to make these, but not sure how 16 oz frozen broccoli translates to fresh broccoli. Two cups of chopped fresh seems too little for three eggs. Immediate help, Please!

I made these last night -- insanely delish! Even my husband who won't touch broccoli liked them. I didn't have cheddar on hand, so I used a shredded Mexican blend that I had and just rough chopped it down a bit. Also threw in a sprinkle of Parm cheese. So so easy and good!!

I made these last night for a dinner party - and my gosh, they were gone before in 60 seconds. Thanks for the recipe. i altered slightly, added fresh minced garlic and a mixed cheese (cheddar/mozzarella)... steamed the broccoli with the garlic for just a few minutes. This is a fantastic dish that's easy to make.

I used to do this all the time when my kid wouldn't eat veggies. To save time (sometimes... not all the time) I would just nuke a bag of frozen veggie mix or whatever I had on hand, and although it's not the best way to cook them, I would saute them in a small amount of olive oil so they got crispy on both sides. they're good hot or cold.

I just made these, but substituted Parmesan cheese for the breadcrumbs(I don't eat wheat and am low carb). I added hormel real bacon bits. Wow!! Amazing!! These are very similar to an appetizer that is available at a local restaurant in New Orleans called bayou broccoli. I made a version of the sauce that comes with them and it was delicious: 3 tbs honey, I tsp apple cider vinegar, 3 tbs Dijon must, and lots of horseradish. Probably about 6 tbs.

I made these for dinner last night. My fiance LOVES broccoli. Me? Not so much. However, this recipe was enjoyed by both of us. Followed recipe exactly with the exception of the type of cheese. We used shredded monterey jack.

This is why I love Pintest. A great, quick, reasonably healthy snack. Added garlic to steamed broccoli, and used combo of cheddar, granda padano and marinated fetta and panko breadcrumbs seasoned with italian herbs. Fantastic. Thanks so much for sharing.

someone mentioned dipping these in ranch...WHY?!? they are SO DELICIOUS as is!! i made this for hubby & me last month; they look odd, but WOW they are SO VERY GOOD!!!! i did add a bit more cheese {8 oz pkg!}, & about 1/4 again as much bread crumbs as called for; they seemed to hold together better after that. but the 'turn' time & cook time were perfect...& so were these!! YUM!!!!

I just made these-- added half a sautéed onion for extra flavor. Didn't want to bother forming the patties so I scooped the mixture into 12 well greased muffin tins. Baked for 22 min in my convection oven. Perfect veggie cups! Really yummy. Thanks the recipe!

Made these over the weekend, I added salt, pepper, garlic powder and onion powder, they were yummy! I used fresh steamed brocolli and all cheddar cheese...next time i will grate some parmesan and add fresh garlic to the mix for more flavor! This is a great recipe, just needs seasoning added ;)!

Just made these and am eating them as I speak! I made a few adjustments, added parm cheese and extra seasoning including garlic salt and onion salt along with a few others! Very tasty! Only a little dry, maybe less breadcrumbs next time? Otherwise amazing!!!

DELICIOUS!! I saw this on Pinterest a few days ago and couldn't wait to try this recipe! I followed it along with some of the commented suggestions. I added bacon bits, minced garlic, I used cheese I had on hand, and I used egg whites, then topped with a sprinkle of parmesean cheese before baking. They came out SO good!! Bland? You're crazy! Only thing I can think of that would have made them bland would be if they used mild cheddar or other bland cheese. Extra sharp cheddar is the way to go!

This must be yummy! I did not have either broccoli or breadcrumbs on hand so I grated some steamed mixed veggies + a little bit of onion in the FP and subbed it for the brocolli. I used AP flour + a little less than a teaspoon of baking powder instead of the breadcrumbs and poured the mix in muffin cups. It was a wonderful savory muffin that my toddler boys loved. Thank you for the lovely recipe - I hope to try the original pretty soon!

Made them last night, and everyone else was right, delicious! Perfect for picky eater kids and adults alike. But my advise is not to use the parchment paper. Halfway through cooking when I was ready to flip them almost everyone was stuck to the parchment paper! I sprayed my baking sheets, did my best to remove all the wax paper from EACH bite, and cooked the rest of the way just fine on the baking sheet. Thanks for sharing this yummy recipe!

I should start this with an admission. I am a foodie. Big time! So, when I saw this recipe on Pinterest, I got really excited--all of my favorite things all wrapped up into one (cheese, carbs, and broccoli)!! These little gems looked (and SMELLED!) sooo good, so imagine my disappointment when I didn't like the taste. I found them to be dry and bland. I took it pretty hard, since I had built them up so much in my mind! Thank you for the recipe, though. I'll probably use it as a springboard to create my own.

It's a simple omelet with broccoli and cheese shaped into patties.

What did you expect them to be? Filet Mignon?

I used seasoned breadcrumbs and plenty of salt and pepper and these were a big hit for super bowl sunday!

We served them with ranch dressing and everyone loved them.

I read all the comments, some saying these were not good.
HOWEVER, I made them for a party the other night and everyone loved them.
I followed the recipe from the Baby Food website (original post) and seasoned w/ plenty of salt & pepper.
That's all.
These were easy, healthy and GOOD!
Not culinary masterpieces, just good, easy food!

Found this on pinterest and had to try them. Made them tonight and they turned out good. They tasted great(I used a garlic seasoning) but my broccoli must have been to big because it was hard to keep them from falling apart while I put them on the baking sheet. They turned out really tasty though, really recommend.

I use raw, shredded zucchini instead of broccoli, and flour instead of bread crumbs. Do not let the mixture stand though, zucchini gets juicy. You can make also squares, instead of patties. Great healthy, easy dish. Thank you.

Saw this recipe on pinterest and decided that I had to try them!
I added onions and some seasoning, so they tasted great, but I found them to be quite cakey? Possibly from the breadcrumbs combined in the egg? I don't know...i'm not that great at cooking. Other than that I loved them!

I made these today. They are pretty popular in my house ...all the kids liked them except my extremely picky, picky 8 year old. Even my husband liked them. Made these for my MOPS group but ended up having to double the eggs and cheese and breadcrumbs half way through the recipe since there wasn't enough to cover all 16oz of broccoli. Ended up making two cookie sheets of it. Smell yummy, they are still in the oven so haven't tried them yet!

Just finished eating close to a whole batch on my own. Don't tell anyone. :/
I used plain breadcrumbs but added my own Italian seasoning. Seasoned the mixture with salt and pepper.

Dipped the them in mustard!

WOW WEE!!!! These are good. My husband mixes up a package of lipton onion soup with sour cream for a chip dip. I dipped mine into that and talk about good!!!!! Thanks for sharing....

Made these tonight and thought they were okay. I wasn't sure how much salt to add because of all the cheese but next time (yes! i will be making them again!) i will add more salt & seasonings. I like the idea that other people had which was dipping them in something. thanks for the kid friendly recipe!

Just made these as apps for a baby shower! Was nervous after reading comments that they were too bland so I revamped the recipe and added a lot more flavor (although I'm sure more fat too haha). I did 4 eggs, half a packet of Hidden Valley Ranch dressing mix, a little bit of grated Parmesan cheese, half an onion chopped fine, half a red pepper chopped fine, about three garlic cloves chopped fine, a dash of pepper, salt and red pepper seasoning and some Italian seasoning. They were incredible and packed with flavor and the chopped red pepper added some color. They were gone fast and everyone was asking me for recipe!

These look so good and I'm having a girls night in and couldn't decide what to make as an app anyway what I am wondering is about how many come out of the recipe. I need to make sure I make enough and the party is this Sat so no time to pre test with turkey day this week.

I made these for a party tonight and they were excellent. I didn't find them bland at all. I served them with ranch dressing on the side and it was barely touched. They also held together really well. I knew I'd be short on time so I used frozen chopped broccoli and chopped it a bit finer. I'm making another batch for me to take to work. I got 23 patties from one batch.

Just made these tonight and they were a hit! I halved the recipe since I used fresh broccoli and didn't have enough for the amount called for. I still used two eggs. I'll admit I was nervous they weren't going to stay together when I was putting the patties on the parchment paper, but they did! And they went over real well. we will definitely be making these again. Thank you for the recipe.

For everyone saying they're bland, the ingredients clearly states salt and pepper. It doesn't have an amount. So, it's presumed that you have to salt and pepper to taste, and then BAM, it's not bland anymore. Lol

I made these for my daughter when she was about a year and a half old. 3 years and another kid later, these are still one of my favorite recipes for healthy snacks. They keep well in lunchboxes and reheat well. Although they're better warm and fresh, I'm not above grabbing one out of the fridge and eating it cold.
