Sticky & Sweet: Baked Figs w/ Mascarpone

baked figs

Here is a great Rosh Hashanah dessert idea using fresh, ripe figs.

I use the same recipe for my stuffed Medjool dates, so decided to try it with figs.
It was nothing but great!

Take some fresh big ripe figs. Preferably Black Mission variety.

Make a criss cross up at the top to open the figs, but not going thru to the bottom.
You want to have sort of a blossom.

Take a few tablespoons of mascarpone cheese (an Italian sweet cream cheese), and blend it with a drizzle of honey.

I baked my figs in the toaster oven, because I only made 8 of them, but you can use a conventional oven as well.

Lay the fig blossoms in a shallow baking pan and bake at 350F for about 10 minutes, some juice will come out of the figs, that's how you know they are ready.

With a teaspoon, spoon some of the mascarpone honey mixture into the center of each warm fig and sprinkle with chopped pistachio nuts.
The cheese will melt and ooze out of the fig to make a sweet delectable treat.

DELICIOUS! Have a Sweet and Healthy Rosh Hashanah!
