Asian Style Cole Slaw
I bought a bag of broccoli slaw at the market last week, having no idea what to do with it.
This took 5 minutes to put together and everyone loved it!
It was a colorful cole slaw with an Asian twist.
Broccoli slaw mix has cabbage, broccoli and carrots and is nice and crunchy.
I added a can of drained madarin oranges, chopped green onions, a chopped red bell pepper, cilantro and sliced almonds.
You can make your own ginger dressing by adding the following ingredients:
6 tbsp of rice wine vinegar
6 tbsp canola oil
3 tbsp creamy peanut butter
4 tbsp soy sauce
3 tbsp brown sugar
2 tbsp fresh ginger, grated
1 garlic clove, minced
Mix all dressing ingredients together and add to the cole slaw.
Keeps in the fridge for a few days.
Everyone loved this.
This would make a great low-fat, healthy cole slaw for your summer weekend BBQ!

Great recipe, Stace. My husband buys this broccoli slaw all the time. I'm on it, as I'm trimming down during the summer because comfort foods are coming soon.
I made this with sesame seared tuna and it was a perfect match.
