What's for Dinner? Spicy Honey Chicken Thighs

honey thighs6

Why do I have skinless and boneless chicken thighs in my freezer?
I have no clue.

I am sure I meant to use boneless thighs with the skin on for a tagine or something. I don't like chicken without skin. Not enough flavor.

What am I going to do with these?

This was easy and excellent. The two E words I like during the week.

Spicy Honey Boneless Chicken Thighs: (recipe from Cooking Light)

2 teaspoons garlic powder
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon paprika (I used smoked paprika)
1/2 teaspoon ground red pepper (or hot pepper flakes)
8 skinless, boneless chicken thighs
Cooking spray
6 tbsp honey
2 teaspoons cider vinegar

Preheat broiler.

Combine first 6 ingredients in a large bowl. Add chicken to bowl; toss to coat.

Place chicken on a broiler pan coated with cooking spray (I lined mine with foil first). Broil chicken 5 minutes on each side.

Combine honey and vinegar in a small bowl, stirring well. Remove chicken from oven and pour the honey mixture on chicken thighs to coat.

Put back in the oven and broil another 2 minutes.

I served this over Spanish rice with cilantro and green beans.
It was a big hit.

From now on I won't wonder why there is a package of boneless thighs in my freezer.

Great recipe - I too had boneless, skinless thighs in my freezer and now I know what I am making for dinner tonight! :) 123 reviewers can't be wrong...
Stacey, I clicked over to the CL link and I have to say your photo of the finished dish WAY outshines theirs. I want to try this from your photos, but I probably wouldn't have from theirs. Excellent job of plating and photography. Now there's one more E for you.

I agree with sam, it even looks like you have some crunchy skin on them. Spicy and sweet sounds really good to me!

I loved this. It had a little too much kick for my 6 year old but the rest of the family for sure finished their plates. I did cook longer: I flipped every five minutes for 20 min total. Then I added the honey vinegar for the last 2 min... Great!

Loved it. The whole family thought it was great... Except my 6 year old it had a little too much kick for her. I did cook it longer: 5 min each side for 20 min total. Then I added the honey vinegar for 2 min. It was perfect.
