What's for Dinner? Grilled Chicken w/ Black Bean Salsa
This is an easy weeknight dinner, and the black bean salsa is the star.
It's a lowfat, high protein delicious, healthy meal.
I eat this when I want to lose a few pounds, and it really works!
It tastes so good you won't even know it's good for you.
Marinate boneless chicken breasts in any type of vinaigrette (you can even use a bottled Italian dressing, if anyone still buys that stuff).
Keep chicken covered in the fridge at least 4 hours and up to 8 hours.
Black Bean & Corn Salsa: (I can just eat this as a meal!) makes a lot
2 cans of black beans, drained and rinsed
1/4 red onion, minced
1 lb. cherry tomatoes, quartered
16 oz. can of corn, drained (yes, I said a CAN, it's sweeter)
3 green onions, sliced thin
1 tbsp cumin
juice of a lime
1 tbsp canola oil
1/4 cup of fresh cilantro, torn
1 small red bell pepper, chopped (optional)
dash of tabasco sauce (optional)
Mix all ingredients together and leave at room temperature until ready to serve.
Grill your chicken breasts until they have nice grill marks and serve black bean salsa over the chicken.
Enjoy!

This is a go-to for us. Good on baked tortilla chips for an appetizer. Delicious. Thanks for the reminder. I'm in Manila this week. The mangoes are outrageously in season.
