Easter Brunch Ideas
If you are hosting Easter Brunch this year, here are a few good ideas for the buffet.
I am serving my "Spinach Pie". Which is the easiest thing in the world.
Buy a frozen pie shell and fill it with:
3 eggs
1/2 cup whole milk
1 packet Lipton Vegetable Soup Mix (I know, gross, but it's all natural)
1 cup of cubed Gruyere or Swiss Cheese
10 oz. package of frozen chopped spinach, defrosted (excess water squeezed out)
Mix all together and fill the pie shell. No salt needed because there are enough seasonings in the soup mix.
Bake 350F for 40 minutes. Everyone loves this and it's good at room temperature.
Next on my list are my Pickled Eggs w/ Smoked Trout and Curried Mayo Canapes.
Oh yummy.
Place hard boiled eggs in some beet juice from a jar for a day, so they get a nice pink color.
For 4 tablespoons of mayonnaise, add a teaspoon of curry powder.
Spread the curry mayo on small pieces of whole grain bread (I cut a slice into quarters). Top with an egg slice, some smoked trout and parsley leaves to garnish. Ok, easy.
And what would Easter be without asparagus? It signifies spring and is one of my favorite vegetables.
