Candy Cake
What to do with all that leftover Halloween candy?
I know I should THROW IT OUT, but I saw this funny recipe on Tastespotting, so figured, what's the harm?
I used 1 cup of chopped candy (I had peanut M&M's and Reeses Peanut Butter cups), and made a simple vanilla cake.
To chop the M&M's, place in a ziploc bag and with the back of a glass, smash them!
I baked it in a bundt pan and it was delicious!
Trick or Treat?
Does anyone ever actually do a "trick"?
I modified the recipe because it only called for 30 minutes baking time, which was way too short, I had to put the cake back in for another 20 minutes or so, and I cut the candy down to 1 cup.
Candy Cake (from Natalie's Killer Cuisine):
1 stick butter, room temperature
1 cup sugar
1 egg, room temperature
2 egg whites, room temperature
3/4 cup milk
2 tsp vanilla extract
2 cups flour
2 tsp baking powder
1/4 tsp salt
1 cup Halloween candy, chopped (I used Reese's peanut butter cups and peanut M&M's)
preheat oven to 350 degrees
1. Cream the butter and sugar until fluffy, about 3 minutes. Add the egg/egg whites and mix until fully combined.
2. In a separate bowl combine the flour, baking power and salt. Set aside.
3. Add the milk and vanilla extract to the egg moisture, mix until fully combined. The mixture may look curdled, but it's not.
4. Add your dry ingredients and mix until just fully combined.
5. Chop up your candy ahead of time and add the candy bits to the cake batter and fold until combined. Pour into a well greased bundt pan and bake 50-60 minutes.
Top with powdered sugar and eat!
This is a very decadent cake.
I think I will make this next Halloween!

You can also put it into cookies, but I suppose that's kind of overdone...
