Salad of Beets, Potatoes & Salmon
There is a reason Suzanne Goin's fabulous cookbook is called Sunday Suppers at Lucques.
It is because you can only make her complicated recipes on a Sunday, when you have all day to roast each individual vegetable, make 3 dressings and a marinade for one dish, and don't forget the chutney to accompany that pork roast you haven't even coated with the fresh herb mixture yet.
I love her recipes. Every one of them that I have ever made has come out delicious.
They are definitely for the person who loves to cook & spend the day in the kitchen. I guess that would be me.
She has this one salad in her book that I have made and loved, but on a Tuesday night after work I just don't have the time to make the herb mixture for the salmon, make the mustard dressing, roast some beets, peel some eggs, blah blah blah.
I used short cuts and adapted her recipe for a weeknight.
So here was life imitating art......I took the easy way out and the results were really great! This is a great salad to make if you have some leftover salmon.
PS Though I love Suzanne (who is nominated for a James Beard Award), NEVER TRUST A SKINNY COOK! (so they say!).
Salad of Beets, Potatoes & Salmon:
package of mixed salad greens
3 hard boiled eggs, cut into quarters
leftover cooked salmon (or a can of Bumble Bee Alaskan Wild Salmon)
fresh dill
8 small new or fingerling potatoes, cooked (roasted or boiled)
3 roasted beets (I used a package of Trader Joe's already cooked beets), quartered
Dressing: whisk ingredients in a bowl
1 tbsp Dijon mustard
1 shallot chopped
1 tbsp mayonnaise
1 1/2 tbsp red wine vinegar
6 tbsp olive oil
Maldon sea salt
fresh ground pepper
Arrange your salad greens on a platter and drizzle some of the vinaigrette on top of the greens.
Now arrange your quartered eggs, roasted beets and quartered potatoes on top of the greens. Coat your salmon with fresh dill and place in the center of the platter.
Drizzle the rest of your dressing over the platter. Serve room temperature.
See, with all the time I saved tonight, I can bake a cake!
