Halloween Side Dish: Roasted Butternut Squash w/ Grapes

I am not a huge fan of Halloween.
Never was. Hate the whole begging for candy thing, and the scary masks and bats flying around.

Yesterday, I went w/ my brother in law to the triplets' Halloween parade at their school, and saw the cutest kids! There were so many creative costumes with much effort put into them!

It's difficult to have dinner when the doorbell keeps ringing and you have to get up to give out candy, so I made something simple, with a nice fall side dish of roasted butternut squash w/ grapes.

It's a pain to cut up squash. Here's a trick: if you put the whole squash in the microwave for about 45 seconds, it softens enough to slice it easier. Or you can cheat, and buy the squash already cut up into cubes. It makes life so much easier!
Here is the recipe. It is wonderful as a side with any roast meat.

Stacey Snacks Roasted Butternut Squash w/ Grapes & Red Onion:

~ 1 butternut squash, cut up into 1" cubes (or 1 package of cut up squash)
~ 1/2 cup of seedless red grapes, cut in half
~ 1/2 red onion, sliced thick
kosher salt and olive oil for roasting.

Place squash, grapes and red onion slices on cookie sheet. Coat with a little olive oil and kosher salt.
425 oven for about 30 minutes.

*Note:I use a thin, stainless steel flexible fish spatula to turn these, since the squash can stick to the pan.

I love to roast butternut squash too. Yum! Healthy and good. I should focus my cooking on the 'healthy' part a little more. haha

I never thought I'd say this but I'd take that butternut squash over a Snickers bar any day. I guess that means I'm a grown up now.

Butternut squash has always intimidated me because it's so hard to cut into. Silly, I know! I'm going to have to try your tip of putting in the microwave first.

I made this and added cut-up turnips, French red fingerling potatoes and parsnips. Roasting this way really brings out the flavors of root veggies and the grapes add a ncie sweetness.
