Curried Chicken Salad



What to do with leftover roast chicken from the night before?
Make chicken salad!

I make so many variations of chicken salad, depending on the season.
I had leftover grapes from the roasted butternut squash w/ grapes recipe, so I decided to make my curried chicken salad.

It's great on whole grain bread or just out of the bowl!

Stacey Snacks Curried Chicken Salad:

~ leftover chicken, torn up or diced (or 4 cooked boneless chicken breasts)
~ handful of seedless red grapes, halved
~ handful of walnuts, toasted
~ 1/4 cup of minced red onion
~ 2 celery ribs, sliced thin
~ 2 tbsp Hellman's Mayonnaise
~ 1 tbsp of mango chutney
~ t tbsp of curry powder
~ salt and pepper to taste
~ fresh cilantro for garnish (optional)


Mix all ingredients in a bowl. You can omit the chutney if you like.
If you like it stronger, then you can add more curry powder.
If you have no grapes, then raisins are a good substitution. I have used pecans instead of walnuts.
There really are no rules (except NO MIRACLE WHIP allowed!!!).

We make this a lot for sandwiches after roasting a chicken, though I usually use saltanas instead of grapes because I have them on hand. I so agree with you about no Miracle Whip, that stuff is just gross

Hellman's mayonnaise is the best! No low fat, light or anything like that--just the original.

I love making chicken salad with grapes. Adding the chutney and curry really takes it up a notch. Looking forward to trying this.

Love your salad... I haven't made a curried chicken salad in a while but I love them. Your recipe is perfect with the crunchy bits of walnut, juicy grapes and the added mango chutney. I'm trying it this week. Thanks!

If I had roasted a chicken like I planned this weekend, I would have made chicken salad also! I love adding cut up grapes and sometimes some nuts for extra crunch. My husband likes it just plain with mayo and mustard though.

I make a salad similar to this, but since I'm not a big fan of mayo I usually use creme fraiche.

Looks so good! Curried chicken salad is great, I usually make chicken salad with dried cranberries, celery, various seasonings and a touch of honey mustard. I make the same salad out of leftover turkey after Thanksgiving too!
