5 Minute Brie Appetizer



What do you make when someone stops by unexpectedly for a drink?
Did I invite you? I don't remember doing so. But drop ins are welcome.

The best part about living in suburbia (I am trying to find some good points) is our neighbor/friend who rings our doorbell around 6 pm while I am preparing dinner.
We love him. He always comes with a big glass of vodka in hand, sipping it as he walks up the block to our house. He usually sits at my counter with his cocktail, and I always throw him some peanuts (yes, like a zoo animal) or let him sample what I am making for dinner.
Welcome to the neighborhood.

Well, another zoo animal stopped by the other night, without their drink in hand. I made my easiest and quickest appetizer that I know how. It only takes 5 minutes to put together, really.

Before I tell you what it is, let me say that I am not a microwave fan. I could happily live without one and would gain the much needed space on my counter. I only use it for melting butter, and don't like it to reheat things and God forbid, would never COOK in it!
This recipe is for the microwave, so I guess I will keep the radioactive box after all.

Stacey Snacks 5 minute Brie:

1 Ile de France Brie (not a wedge, a whole wheel)
Honeycup mustard, the stuff in the hexagon jar
chopped pistachio meats


Carefully cut off the top rind of the brie with a sharp knife.
Leave the sides in tact.
Place in a microwave dish.

Spread Honeycup thick honey mustard on the top and sprinkle with chopped pistachio meats.
Microwave 1 minute on medium and see what happens!

Serve with apple slices or crackers, and as it cools down, you can keep reheating it in the microwave, so it still has that oozy look.
It so tasty and SO EASY!
and who doesn't have a brie in their fridge just hanging around?

I love Brie! I'm not big on pistacios but I have a recipe for baked brie in phyllo dough with almonds and brown sugar. It's great! I'll send it to you if you ever want to switch it up :)

agree with you on microwave. only additional use I vote for is cooking corn in the husk (2.5 minutes) -- quite handy when you are moving too fast to grill or boil.

I do have brie in the fridge! Hmmmm. Now I just need the mustard and nuts. That looks delicious.

Yes, we have been married for 18 years and it really is quite an accomplishment. Its hard work, but also very rewarding! We should both be proud!
