A Fish Named Ralph
We were invited to the beach yesterday for lunch, by our hospitable and good friends Sally & Scott.
Scott caught a 10 lb., 30 inch long, Striped Bass from the surf. He was a beauty, and for some reason he named him "Ralph".
Their pug Finster was not too happy to be sharing the house with someone bigger than he was.
Scott gutted the fish, and Sally stuffed him with fresh herbs and lemon, salt & pepper and grilled the big guy in foil outside on the grill for a good half hour on medium heat.
He opened the package and we ate the meat right from the foil packet.
Sally made a fantastic fresh plum and mango salsa to go with Ralph.
It was a fantastic lunch, and a great way to end the summer.
Plums are plentiful right now at the farmers' markets.
Here is her recipe for the plum salsa.
Sally's Plum & Mango Salsa:
2 ripe plums, diced
1 mango, diced
1 lb. cherry tomatoes, halved
1/2 diced white onion
1 jalapeno pepper, seeded and diced
1 cup of fresh corn (you can substitute frozen corn)
Fresh lime juice and olive oil
salt and pepper
We finished the evening with soft serve ice cream, funnel cake and the best sunset we have seen all summer, a sign that fall is around the corner.
Comments
Here is the information straight from the fisherman:
"Ralph was caught on a high/low hook set up using fresh clams at outgoing tide at 7:30AM. Our actual fishing spot has to remain a secret."
