Mac 'n Tuna Salad
This recipe is not really anything ultra gourmet, or lowfat, and should not be filed under culinary masterpieces, however, it is so damn good, I could eat the entire bowl.
I make this in the summer when I don't feel like cooking. Yesterday, I made it in the a.m., packed it in a cooler and took it to the beach for a picnic lunch. Everyone loved it!
You are probably thinking, it isn't really blog worthy, but I thought I would put it on, afterall, it is a food blog, and I am sure my editor won't mind.
This is the stuff your mother used to make (not my mother, she never made something this yummy!!! ouch).
Tuna and Macaroni Salad: (there is no real recipe, I make it as I go, do your thing)
1 lb. pasta, shells or farfalle (bowties), cooked & rinsed in cold water
4 ribs chopped celery
1/2 yellow onion, chopped
1 c. defrosted peas
3 cans of drained tuna
Now, the rest of the ingredients are your choice, I throw in whatever I have in the vegetable bin that is about to be thrown away (shredded carrots are good too).
a couple of chopped scallions
1 red or yellow pepper, chopped
a handful of chopped dill and/or fresh parsley
Dressing:
1 cup HELLMAN'S mayo (I know that's a lot of mayo, but I like it like that)
2 tbsp Gulden's spicy brown mustard
3 tbsp of pickle relish w/ a little pickle juice
salt and pepper
Mix all together and refrigerate until ready to eat. This is addictive and the kids will love it!
